La Prima Pork Chops

Ingredients:

2 thick cut pork chops

1 1/4  cup peaches chopped

1 1/4 cup apricots chopped

5 oz. Apricot Peach Spice Jam

1/4 tsp Sea Salt Essential Blend

1 - 2 tbsp Lemon Garlic Sea Salt (enough to generously season both sides of chops)

1 -2 tbsp shallot minced

Instructions:

  1. Make the Apricot Peach Salsa. Mix the fruit, Sea Salt, shallots and Apricot Peach Spice jam together and set aside.
  2.  Rinse the pork chops and pat dry with a paper towel. 15-30 minutes ahead a time, season the pork chops liberally with Lemon Garlic Sea Salt.
  3. On a sizzling hot grill (or grilling pan), add a little bit of olive oil and sear each side. Finish in same oven-safe pan and roast on 400 degrees until internal temperature reaches 145 degrees. Let rest for at least 3 minutes before serving.
  4. Top generously with our Apricot Peach Salsa and serve.
