Natale's Famous Potato Salad

Ingredients:

3 pounds red potatoes

7 to 8 hardboiled eggs

1 red onion

2 cups red wine vinegar

1.5 teaspoons mustard seeds

2 tablespoons sugar

1 teaspoon Stella's Table Sea Salt Essential Blend

1/2 cup mayonnaise 

1 tablespoon Dijon mustard

1 tablespoon course stone-ground mustard

Salt for boiling potatoes

Instructions:

Cut the onion in quarters and then thinly slice. Set aside. In a saucepan add the red wine vinegar, Stella's Sea Salt, sugar and mustard seeds. Bring to a boil. Once boiling, turn off the stove and let cool for 10 minutes. Then, pour the mixture over the onions and set aside.  

Peel half the potatoes and leave the skin on the remaining half. Dice into 1/2" cubes and place in large pot. Cover with water and then add salt (about 2 tablespoons). You want the water to taste like the sea. Bring to a boil and cook for about 4 minutes or until fork tender. Drain the potatoes and set aside to cool. 

In a bowl, combine the mayonnaise, mustards and about 1 tablespoon of the red wine vinegar mixture (or more to taste). Add Stella's Table Sea Salt and Pepper Essential Blends to taste. 

To the cooked potatoes, add the eggs (sliced or chopped depending on preference) and the red onions (don't add the vinegar mixture but don't drain either! You can reuse the mixture if you wish). 

Add the mayonnaise mixture to the potatoes and stir until all combined.
