Next Level Granola

Ingredients:
2 cups oats
1 cup shredded coconut (sweetened or unsweetened)
1 cup slivered almonds
1/3 cup chia seeds
1/2 cup dried cranberries
1 cup chopped dried apricots
3 tablespoons butter
1/4 cup light brown sugar
1 1/2 teaspoons vanilla extract
1/4 teaspoon salt
2/3 cup (or 1 jar) of Stella's Table Next Level Apricot Jam
Instructions:
Pre-heat your oven to 325 degrees.
Combine the oats, coconut and silvered almonds. Stir until well combined and then pour onto a large cookie sheet until evenly distributed.
Put into the oven and bake until golden in color, about 10 to 12 minutes. Once you remove from the oven, decrease the oven to 300 degrees.
In the meantime, in a small saucepan, melt the butter. Once melted, add the brown sugar, vanilla, salt and Next Level Apricot Jam. Stir until all combined and bring to a boil. Once boiling, set aside.
Once the oat mixture comes out of the oven, pour into a bowl and add the dried cranberries, apricots and chia seeds. Stir until combined.
Pour the apricot mixture over the oat mixture and stir until fully combined. Line the same cookie sheet with parchment paper and then pour the granola mixture onto the cookie sheet. Do not evenly spread out. You want chunks of granola.
Place in the oven for 25 to 30 minutes.
Remove from the oven and let set before you break up. Place in an airtight container.
This is great over Greek yogurt with berries, or just alone as a quick snack!
